Вот моя функция, которую я написал до сих пор.

Вместо печати

_ _ _ _ _) Я использую ")", потому что подчеркивания сами по себе меняют форматирование здесь

Я возился с этим, и я могу заставить его напечатать только одну, но она печатает первую букву и только эту. Я понимаю, что у меня есть какая-то логическая ошибка, но мне было очень трудно понять, где я ошибаюсь.

Я также не уверен, как заставить мою игру зацикливаться, если они захотят играть снова.

print (stringDisplay)

необходимо извлечь из цикла for.

И если вы хотите разрешить воспроизведение игры, вы можете вложить другой цикл while с типом пользовательского ввода в концеигра.

Вы должны напечатать получившуюся строку вне цикла for, когда она закончит конкатенацию строк: 

def changeCharToUnderScore(eachLetter):
    stringDisplay = ""
    for x in eachLetter:
        stringDisplay += x
        stringDisplay += " "
    print (stringDisplay)
    print("Already guessed: " + ', '.join(alreadyGuessed))
...
