Читайте манифест из JAR с Gradle

Как можно прочитать манифест из зависимости jar в gradle? Я хочу распечатать эту информацию

Я не нашел решения для этого.

Возможно. Вот краткий пример, который я придумал, используя Kotlin DSL : 

dependencies {
    implementation("org.apache.commons:commons-lang3:3.9")
}

val readManifest by tasks.registering {
    doLast {
        val archive = configurations["compileClasspath"].filter {
            // This will be list of resolved jars, so filter on the jar name.

Конфигурация implementation неразрешима, поэтому вместо нее используется compileClasspath, поскольку она разрешима. Вы можете увидеть дерево конфигурации здесь
