В поисках ответа на этот вопрос я нашел хорошее и простое решение на форуме Apple Discussions , переопределив -(void)drawRect:(CGRect)rect для UINavigationBar:

    [image drawInRect:CGRectMake(0, 0, self.frame.size.width, self.frame.size.height)];
