Я помещаю jboss-client.jar из $JBOSS-HOME/bin/client в classpath.

Редактировать: Вероятно, стоит отметить, что исключение NoSuchEJBException происходит из-за bean.sayHello(). Так что, возможно, это не проблема споиск, но с подключением?
