Как установить значение в таких полях, как {DOCVARIABLE SomeName \* MERGEFORMAT} в документе MS Word через OpenXML?

Переменные документа хранятся как DocumentVariable в элементе DocumentVariables внутри Настройки в DocumentSettingsPart

Таким образом, вы можете получить переменную Document следующим образом:
