Я считаю, что ваша проблема связана с сборкой мусора. Ссылка dropdown в вашем методе __init__() не сохраняется (bind использует weakref, который не помешает сборке мусора). Поэтому я думаю, что все, что вам нужно сделать, это заменить локальную переменную dropdown переменной экземпляра self.dropdown следующим образом:
