Я достиг определенного прогресса в этом. Я обнаружил, что, поместив мои файлы времени выполнения openJFX ПРЯМО в мою папку lib, он продвинулся немного дальше. Новая ошибка стала такой:
ImportError: libGL.so.1: cannot open shared object file: No such file or directory
После небольшого исследования я добавил команду RUN в свой dockerfile:
RUN apt-get update && apt-get install libgl1-mesa-glx -y
